Three colors: Red quinoa with mango and eat broccoli

There is a simple tip to help you nothing if you vegan eats. Make dishes with as many colors! All kinds of bit-like, but it does work. Many different colors = lots of different minerals and building materials. It's an easy way to varied to keep eating. And you come by on color to choose also quite unexpectedly good combinations.
As this extremely colorful and super easy dish: Orange, sweet mango, dark green, salty broccoli and Red quinoa with fresh dressing. The quinoa I chose here a bit for the color, but is also useful because there is a lot of protein in it. The quinoa-avoid image? You can also make this recipe with brown rice or bulgur. Less coloured, but by the dressing just as delicious. And a little red pepper at the broccoli meewokken is also beautiful!
Needed for four people:
- 400 grams quinoa (or 300 grams Brown rice/bulgur)
- 2 broccoli, cut into small pieces
- 2 ripe mangoes
- 5 to 6 tablespoons soy sauce
Dressing:
- Squeezed lime
- 2 teaspoons Ginger (versgeraspt or ginger paste from a jar)
- 3 tablespoons olive oil
- Tablespoon honey
- Freshly ground pepper to taste
Cook the quinoa or substitute cooked as the packaging tells you. Wok in the meantime, the chopped broccoli in about ten minutes. Add the tablespoons soy sauce with a splash of water and let simmer for a moment. Peel the mangoes, cut the flesh from the pit and cut the slices into cubes.
Beat all ingredients for dressing together. Drain the quinoa, do back in the pan and mix the fresh dressing through. Put in a nice big scale and divide the mango and the broccoli on top. Scoop on only table by each other for the color effect;)
